Intel NUC which model for 8 cameras?

Hi, I have 8 IP cameras, various models and resolution, for which I would like to have motion detection (just some areas) and send an email/telegram notification when there is motion and/or line crossing.

Which specs should the Intel NUC PC have?

Is there a guidelines if I wish to add a couple cam more (need more RAM, faster processor)?
