If the day/night mode auto switching works, it should be as simple as making different settings for day and night in that menu. If it doesn't auto switch then there may be manual controls, but unless they track daylight hours it will be a mess. Some of the Dahua cameras allow changes by sending comm...

Most IP cameras have settings that can be accessed via a web page at the IP for that camera. Are you doing something different ?

What type of camera is it ? Most of mine are able to sort themselves out for day/night using an inbuilt light sensor. The Dahua ones can be forced to remain in colour too. I am impressed with that number plate in the dark though; what is illuminating it ?

The DAT file should be showing you multiple times and images as well as the data. You could test it by walking towards the camera from 30ft away and then view the DAT file. dat1.png Here: 1. I can click on different times, and it shows the corresponding image and adds squares around identified items...

The NGROK settings have been added in the last few versions, so the Help file may not have fully caught up yet. I'm afraid I have no experience with NGROK.

I can't give you a straight answer, as it has changed in the past year and may have changed again. It was previously necessary for it to be ticked to use ONVIF commands from the camera, but now it isn't. It will need an email to Support to find out the exact function. Sorry for being useless
