I tap the + or - in the dial.  It is interactive.  I imagine the pan/tilt would be the same but I only have z and not pt.
 
Do recognize that if you have any zones, they will be warped and not accurate to the original settings if you zoom in or out with the lens.

Varifocal lens cameras have a physical zoom ring or dial around the lens barrel. This ring allows you to manually adjust the zoom level by rotating it clockwise or counterclockwise. Look for this ring on your camera lens.

				make sure you have "Enable Pan/Tilt" etc checked in the "PTZ/Control Tab" in each camera's settings in Blue Iris.
That enables the zoom for varifocals in BI live view screen.
